Coffee Vinegar

New small batch.
 
Just happened across this idea a couple days ago from an article so decided to try it, I just decided to add a vanilla bean to it.
 
1 lb Coconut sugar
1 vanilla bean
60gr/2oz good coffee beans.

Made a starter in the morning with Lalvin_EC-1118
Rough ground beans, split vanilla bean.
Add boiling water to sugar and vanilla bean, when cooled add coffee grounds, top up with water to desired level.

Looks like it will be about %7 alcohol/vinegar.

This morning nice bubbling.

Bottled it.
Heats been so high that its been evaporating, the culture grew much thicker too during the heat.
Taste is realy hard to describe, very smooth, kept taking sips to try and describe the taste, not of coffee however after 5 min theirs a slow slight taste of coffee. Its like a very smooth rich whisky maybe malt vinegar, no scratchiness in the throat as I keep tasting.
Looking forward to using it on a salad.
