Hello from NC

Hey everyone!
 
I found this site because this year I want to learn to make good hot sauces on purpose, not just throw everything into a blender.
 
All of my garden labels bleached out, so I don't know what anything is until they fruit!
I'm growing:
 
Jalapenos
Habaneros
Sugar Rush Peach
Cayenne
Reapers
Ghosts
Aji Charapitas
Pepperoncinis (for the wife)
Hungarian hot wax
 
I'm looking forward to discussing hot sauce with you ladies and gentlemen!

LOL! Dude... you don't need to man up, those are good peppers!
 
Ha... Yes they are good.
But my wife really did ask me to grow them for pickling. I've never used them in sauce.

I'm looking forward to reading everything here about fermenting peppers for sauce.
