baking Take your pizza game to the next level

it's a solid technique. not quite the same as an oven, but it gives good results. possibly first popularized in the modern cuisine? amazing set of books if you haven't read them. i'd buy it if it wasn't like 500 bucks, but you can pirate it on libgen IIRC.
 
also, great forum. best online pizza resource probably. i've lurked on there for a long time and entertained many ideas over the years. baking steel, various electric ovens, diy electric oven, blackstone oven, uuni, roccbox, large wood fired oven kits, you name it. but finally last year i actually got an oven, and i'm pretty happy with it. it's a pizzaparty passione with biscotto saputo floor tiles for more balanced cooks at high temp (they have lower thermal conductivity so the bottom of the pizza doesn't burn when you're running the oven at 900°F+). it runs on propane although i've converted it to natural gas. you can also just wood fire it.
