In and Out burger/cast iron skillet

I beat all of you, already.  I had some leftover ground beef - 75%, so no need to grease the cast iron.  I smashed it, cooked it to perfection, topped it with some Hatch NuMex Gouda cheese, some avocado, fried egg, Klaussen pickle slices, yellow mustard, and French bread hamburger bun.

When I say BOOM, I mean it, goddammit. :D  :rofl:
 
Because I'm a slob, and I was already outside, I didn't even use a napkin.  I just jumped in the pool right after lunch, and left my burger juice in there.
 
It is a good technique. A bit counter intuitive is the fact that leaner beef can be juicy cooked this way. Do Three thin smash patties of a leaner grind vs same amount of beef in 1 patty to see what I mean

Nah.  We are scared of the wrong things.  Give me the fat and protein.  Keep the sugar and carbohydrates.  Lean meats are for Jenny Craig. ;)

Not advocating just pointing out a benefit of the technique. I like an occasional turkey burger, and smash really helps lean proteins not dry out. I am a medium Ground beef for burgers guy normally. 77/23

77/23 yields a really juicy burger.  I usually use 81/19 or 85/15 if the wife went shopping.
