bottling Home Hot fill safety

I read the articles. My take on the hot fill method: If i take my sauce which is boiling, (212ish degrees I assume) and fill it with a spoon and metal funnel (maybe a new turkey baster?), and leave an inch of air and cap and flip into new 5 ounce bottles that I heated in oven to 250 and cooled down to room temp in the oven and just took out, and wait 5 min then flip over and let cool at room temp, abd the sauce is 3.9 ph or lower, then this is safe? how long will sauce last outside of the refrigerator unopened? How long once open? Am i missing somethinf in my technique? Thank you!!!
 
the steps described are correct.  1" of head space is a little much for woozy bottles, generally they can be filled up close to the neck ring.
 
unopened, they will last a year or so.
opened...totally depends on the ingredients, but it is best to refrigerate after opening and then use common sense.  Some sauces will eventually go bad after several months even if kept refrigerated.  some will never go bad.
