Thegreenchilemonster Cooks For Three

Since I recently found out that my wife is pregnant, I'll be cooking for 3

I figured I would share dishes throughout the pregnancy that are focused on providing an expecting mother the nutrients she needs to develop a healthy baby.

All of the meat I cook with will be organic, grass fed, and hormone free. All of the vegetables will be organic, and mostly home grown, until the season ends.

There will of course be chiles used in every meal, as always.

To start things off, last night I made this grass fed organic grilled butterflied leg of lamb, curried chickpeas, and steamed broccoli. Lots of quality folic acid and iron in there.

I marinated the lamb in olive oil, fresh garden rosemary, and a diced aji limo, before grilling it up.

String beans and bok choi stir fried in lamb fat with lemon grass and double black soy sauce, baked sweet potatoes, broiled tiger prawns topped with an aji charapita aoli, bone in lamb cutlets and minced boned out lamb cutlets pan seared with a garden rosemary S&P rub.

Surf and turf!

Me, too!  Do you put any lemon zest in the aioli?  I'm thinking an egg, oil, lemon juice, dijon, S&P mayo, buzzed up with an immersion blender, with a minced seeded aji limo, one minced clove of garlic and the zest of one lemon blitzed in at the end.  Is that close to what you're doing?

Yeah, you pretty much nailed it, but I use mayo, instead of the oil and egg. I have made it both ways, and it isn't really much better starting with the egg and oil versus mayo.
 
My mother in law cooked for us tonight. Pho bo from scratch. She makes the best pho I've ever had.

2 types of fresh persimmons from their garden, and some freshly picked longans from their garden for dessert.

Oh yeah, and a silver bullet on ice to wash everything down with.
