Tonkotsu Ramen

Finally Cool enough for soup weather. Breaking the season in with some tonkotsu ramen. 
 
Chicken feet, check

Boiled for 20 mins , rinse and scrub and pic out the marrow

The collagen from skin is the key. I wont even buy skinless pork belly anymore. Chicken feet are one of the biggest PITA things to eat ive ever had and worth every bone you spit out. Shame to use them for stock. :P

the collagen was so thick when I pulled the stock from teh fridge I had to run it under warm water for 20 minutes just break it up enough to get out the jar. I pulled a handful out and it was damn near solid like a glue that had set up.
