Alright guys and gals, here's a new food thread for us all. One that will kick some of our asses into gear.
 
Post what you plan to cook and have it all worked out (or are working it out), but haven't made it yet. Describe it as you see it, and that will be the inspiration for you too cook it. When you finally do, go ahead and quote it with your masterpiece below. Boom!
 
And to the peanut gallery, feel free to egg us on :P

I will start.
 
There's this Alsation pizza/flatbread called a tarte flambee. I've had it many times. Like a rustic cracker crust pizza. The base is often creme fraiche. The one I want to make is...
Tarte Flambee
Creme fraiche base
Seared bay scallops
A mild nutty melting cheese, fontina or havarti
Fresh dill
Saffron-infused oil drizzle
A tangy hot sauce (or spice up the oil)
 
Doing a Pumpkin bake and Focaccia tomorrow for my Movie Halloween day.
 
Heritage pumpkin stuffed with spiced chicken that is precooked sous vide style stuffed with Coastal Cheddar, Onion, Garlic, Cranberries, Rosemary. Chipotle and my Powder Habanero being the spice. Bread will be used for cheese snacking, Blue, Havarti, Cambozola,

Arroz con pollo...more or less
 
Couple pounds of chicken breast tender loins. They were out of the thighs i wanted
2 cups of extra long grain rice...its rinsed and soaking now.
3 tbs panca paste
1.5 tbs oyster sauce
1 tbs amarilo paste
Additional panca powder blend if needed
3 tbs minced cilantro in the stock...leftovers for garnish
3 cups of no salt added chicken bone broth
1 cup of water
Big yellow onion and part of a red too, 2 stalks celery, tbs minced garlic, 2 tbs tomato paste, tsp ground cumin, 1/2 tsp black pepper and 6 mild green/red Fresno for the sofrito
Diced carrot, frozen peas, canned black beans and frozen corn. About  3/4 cup each.

Thanks, the sweetness from the corn and carrots worked great. Plus the bit of crunch. Both were just barely more than heated up in the last 15min of cook time. I gave it a good dusting of my panca powder blend at serving too. I really like the flavor and it needed just a tiny bit more heat.

Great looking Arroz con pollo SMDS!  
 
This weekend we'll be doing some sort of roast pork with starch and a vegetable. 
 
Shortly after that I want to do some dolmas and a general meze type grazing table for another occasion.  
 
There's going to be a birthday fiesta in a few weeks, I've been asked to smoke a butt or two (and maybe some more fish).
