Trinidad Chicken Pelau.

FYI;Chicken pelau is a wonderful one pot dish, that's very popular in Trinidad and Tobago and many of the other Caribbean islands. ... A tasty one pot dish with rice, chicken(I added a  bit of corn beef),pigeon  peas, an assortment of herbs and spices all flavored by coconut milk.The unique flavor comes from searing the meat in caramelized sugar then simmering with rice, coconut milk, and pigeon peas & carrots..& a scotch bonnet pepper..cooked it in my rice cooker  after the meat was caramelized. Avocado &blackened (not burnt) ripe plantains added  more Caribbean
flavor.
This is one of my favorite meals to cook,similar in ways to Arroz con Gandules.

Here's another Trini dish I love ..if you like eggplant & shrimp then you might like this,eaten with Dhalpuri or any type
of roti/naan or rice...one way to eat my veges & enjoying it at the same time..heavy on the seasoning esp., thyme. ;)
