Thanksgiving Brainstorm 2018

I never use recipes, and I usually like to whip up stuff on the fly, so I figured we could all brainstorm some ideas here...

One of the sides I want to do is some kind of sweet potato (candied yams) with maple and curry... was thinking whipped but I always do a mashed potato with roasted garlic and sharp white cheddar that is bangin! I put broken up crispy onion stings sometimes... so thinking for the sweet potato not mashed, maybe cubed and candied, but love the skins... hmmm maybe baked whole then sliced into medallions and then candy them with butter, brown sugar, maple, curry/pepper powder, sea salt...

What you guys got?

since my Thanksgiving is over I will jump in on the sweet potato thing.     I can't believe I have no pictures of it , as I do it often when Grilling.  I am sure you could adapt to whatever cooking appliance you are using.

cooked about 70 % through with the skin on ,  oven or more often in  microwave.

let cool a bit,   sliced into  1/2 to 3/4 inch rounds.

on a fairly hot grill ,  indirect

glazed occasionally with a  mix of melted butter, maple syrup , cinnamon , salt.

10  to 15 mins it will caramelize  and get some nice grill marks.

A cool idea I saw at thanksgiving in Florida when visiting my wife's family was a entrements/palate cleanser course.

He Aunt is old school and likes to do a multi course meal  instead of the everything on the table at once approach.

She made a grapefruit champagne sorbet   served between some the the richer dishes .

I have also seen this done as a straight up cocktail between courses  during a tasting menu  ,made  with a  cucumber lime Gose  , basil and citrus is I remember correctly.

My friend hated it but I kind of liked it, very tongue sizzlely.

Small 12lb turkey
Broccoli instead of green bean casserole.
White and yellow sweet corn

Mashed taters and gravy

Minimal leftovers and cleanup since its just for 3 people. Probably make a turkey pot pie later.

They NEVER get crispy enough for me. Limp ass fries. I'd for once like some that could cook like regular fries, and like you say, treat them that way.
