Growers in tropical climates

How does growing chilis work in countries where it's always nice out? If the weather never changes much, how can the plants go dormant? Do they just produce until the stress kills them?
 
Well I had heard that if you keep conditions set for growing, the plant stresses out and dies from just staying in production and that's supposedly the reason for letting them go dormant during the winter months.
 
Like SECS said, these plants are, for the most part, tropical perennials. They were made for the climate you're talking about. It is my understanding that, even though plants can live for a decade or more, some tropical farmers pull their plants after three years and keep planting new ones bc the younger plants are better producers.

Nothing lasts forever, even under ideal conditions.
