been a long time but finaly made some for snacking with coffee.
 
Chocolate Ginger Spice Muffins
 
Fife Flour %50
Buckwheat Flour %50
Ginger
Molasses
Raw Chocolate
Cinamon
Nutmeg
Chipotle
Baking Powder
Salt
Butter
Coconut oil
water
egg
 
And Cardomon, forgot to add to the list.

I make savory cornbread muffins in a 6-cup muffin pan
 
Something like:
 
1.5 cups flour
0.5 cups cornmeal
2 rounded tbsp sugar
1 rounded tbsp salt
1 slioghtly rounded tsp baking powder
 
2 eggs
1/4 - 1/2 cup oil (to taste)
1/2 cup milk
optional extras like blueberries  or nuts or diced pepper, etc., maybe onion powder
 
Thoroughly combine dry ingredients. Start the wet ingredients with the eggs first, in case you need to fish out shell fragments. Then combine the rest.
 
The clock does not start until the wet and dry meet. Warm the oven up to 400F and prepare the pan. Fold everything together, making sure not to leave any dry (like in the bottom center of the bowl).
 
Measure the batter into the muffin cups, and bake, keeping an eye on them after ten minutes. Meanwhile you have time to wash all the prep gear so you have a clear kitchen waiting for them when they come out.
