Kraut attempt #2 begins, with new equipment.

After the last one ended up with, I think, way too much surface area to keep up with yeast cleanup, I waited until I had my nipplicious new equipment. Mason jars are a bit dear here, but hopefully it'll be worth it.

The weight seems like it's off to a good start. I think this is just about an ideal amount of cabbage for this jar and this weight, so I'm hoping my chances here are pretty good.

Is it cold in here?

"Where am I going to put this? My house is so cold all the time, and the only consistently warm thing is..." Right. So that should've been obvious. The kraut ferment is now perched atop my grow tent, where I'm hoping it keeps a nice comfy 20C.

Morning 1, already looking better. A little brine (all from the cabbage, no water added) goes a much longer way in the right container; no overflow yet, but I wouldn't be surprised if I got a bit today.

It got a bit colder than I'd like, but not that much, and it should come back up during the day. So hopefully this is a better start than last time.
