Other ideas for papas seca?

Well i stocked up on them.. got 5 bags. :D 3 Belmont brand and 2 Inca Foods. They rock for beef stew and curry chicken so far. Even cooked some up with a ground sausage for something kinda like a breakfast hash.
 
Now im thinking maybe something like a hatch chile au gratin recipe or a chicken chili verde with papas seca and some added heat from Aji Amarillo paste?

4 big thighs cut with the grain into strips
About 2 dry cups of papas seca...soaking now in hot water
San Antonio Farms Hatch salsa verde to taste...not done yet sooo
2 tbs organic Aji Amarillo paste
Heaping tbs of minced garlic
1 jalapeno minced (sofrito)
1/2 a white onion minced (sofrito)
About a tbs of ground cumin
Pinch of Mexican oregano
3-4 tbs of fresh chopped cilantro
Couple cups of bone broth
 
Chicken is simmering now for maybe an hour then i will add the dried potatoes and adjust with more Hatch verde salsa/cilantro as needed.
 
seco de pollo con papas seca? or is there another closer fitting name for it?
 
BTW this San Antonio Hatch sala verde aint half bad at Costco's pricing. 2 large jars were about 8 bucks....Needs more heat though so i just add some at serving.
