Food Mill help

Hey Everyone!!

I had a quick question on what type of industrial food mill you would recommend.  (I have searched the forum but cannot find where this was discussed directly).

I am about to start cooking my hot sauce commercially in a certified kitchen that will be a shared space.

At home after I simmer my peppers, vinegar and garlic I run through a blender and then a small hand held food mill/sifter to strain out the excess pulp, seeds. etc.  This usually yields 4-7 cups at a time which is great for test batching or making the many samples I have been giving out.

When I go to start making this I want to scale up to 10-15 gallons.  I will be using an immersion blender to keep it in the same pot but now I need to run it through a industrial size sifter/food mill.  All the food mills I have seen would take a while to run 10-15 gallons at a time.  The one I did find that I thought would be perfect, the company no longer makes it.

Has anyone had any luck with finding one large enough to run 10-15 gallons through or have a better idea.  I have most of the other process figured out with scaling up besides this.

I need one that is mobile enough to move in and out of a kitchen that will be a shared space with others.  I also have a bad back so I need to avoid trying to lift 150 lb machine each time to make it mobile.

Thank you!

This is the one I thought would work really well but they stopped selling it*

Hi Dash-10!

I think the model that I have will work nicely for you. It's made of tin so it's very light and can fit onto many different sized pots.  Perfect for a shared use kitchen.  There are also many other options that could also work - just depends on how big of a batch you want to run.  The automated ones are quite heavy and expensive.  hope this helps!

:)

Without knowing all the ingredients, you may be able to cook the peppers with some of the liquid, run that portion through the mill, then add the rest of the ingredients. That way, you aren't having to run all 15 gallons.

I like the mill SnF posted, will definitely keep those in mind.

Thanks everyone for the help as always!!

SnF the one you use does it just hook onto a 5 gallon bucket? I saw one on the site that has a stand but not sure if it is worth the extra money for it.

IIRC it will fit any pot between 10 and 24 inches.
