Nachos!

Tried my hand at doing Mexican for the first time ever and ended up with this.... 
 
The foundation and some homemade guacamole. I got NFI what guacamole is supposed to taste like, never done it before....it ended up tasting flat, like it was missing something.I noticed some recipes include Tabasco. So I added a good dash of Tabasco and a fair whack of lime juice and it perked it up nicely.

Beef, Kidney Beans, chopped onion, crushed tomatoes and a decent helping of Cumin, Coriander, Cayenne pepper and Chilli flakes simmering away

As we all know, Mexican food kicks ass, and thus this can be the official nacho thread. Show us your wizardry!

I've never seen that on the store shelves.
 
So I must endeavor to make it.

I just looked at all the Ranch dressings yesterday at the regular grocery store. I wanted to find Kraft's Southwest Ranch and verify its the same or close to the Taco Bell stuff. Why?....because the bottle with Taco Hell on the label cost around double the price. Actually about the same for a smaller bottle.

Didn't see an immediate topic for this so I posted this. 
 
Nacho chips, some chorisco sausage ( and I will never get the spelling right), Mexican melty cheese, and some ripe, mean habaneros.
 
This sausage is not fully cooked, but is far superior o the processes stuff we have here. 
 
So I have it all cooked and am ready to eat, and my wife just comes and digs a spoonfull of the meat (with habs).  For the record (and court), I warned her beforehand.  Did not go well for 15 or 20 mins, but the final product (as I eat it in the Dog House), is fabulous!

well i just looked at 14 pages of Nachos while eating some cottage cheese and pineapple chunks with hot sauce, and thought  :think:   Now i really want some nachos 
alas there is nothing to make nachos with in the house  :mope:
2 moar vodka/7-up later :drunk:   and 10 minutes of rummaging through cupboards, fridge, freezer, etc. 
that was how this monstrosity creation came to be  :shocked:
 
Well, i can't seem to find the find the drunken chef thread, or the post your worst spicy meal :lol:  thread anymore... 
 so, i figured since all the epic nachos i just looked at inspired me to want nachos, might as well posty up in here and bump this thread so others can find it  :party:

i'm tellin y'all it was so many different flavours, and textures, and it really was fantastic though  :metal:   :high:  :drunk:
looks though, and possibly was; as unhealthy as drunk, broke, college-eats back when I used to come home and try to "create something"  :rofl:
