Ideas for Numex sweet peppers please

Ok so i have a good few plants that are growing Newmex sweet peppers and they are all finishing their turn to red so will be really nice and sweet but i am not sure what to do with them, other than just eat them raw which is great but i was wondering if anyone had any ideas of what to do with them.

Roast them, peel the skins off, chop them up and use them like chopped green chile. Or blend into a sweet red chile sauce, adding a little other pepper for heat.

Calvin's 2.0 powder, New Mexico chile seeds, other varieties and some superhots! Grow your own and taste the difference!
