Cocoa/Chile Dusted Scallops

I cooked this recipe at work today. It sounds weird but it's actually pretty good. fairly easy too/


6-8 nice sea scallops
1 cup panko ( Japanese bread crumbs)
2 tsp cocoa powder
1 1/2 tsp ancho chile powder
1 tsp chipotle powder
1 tsp salt
Grape seed oil
Butter

Mix panko, chile and cocoa powders and salt together. Bread the scallops in the mixture. Heat a little grape seed oil in skillet. Add a tbsp of butter just before the scallops go in. Saute scallops apx. 4 minutes on each side until done.
 
Hell yeah chuck! I've had a similar recipe, but yours sounds a bit better. They really were good though, I wasn't sure what to think about the cocoa at first but I really liked it.

Thanks for posting this, I haven't had scallops in months I'm going to have to go pick some up.
