smoking Mild to Wild

For anyone that isn't already familiar with it, I would like to recommend my absolute favorite BBQ Sauce. Mild to Wild Pepper & Herb Co. "Smokin' Chipotle". I put this stuff on everything. It has nice consistent heat and great flavor. My second favorite is "Fiery Habanero" made with Red Savinas. I like to call it the grenade sauce......it takes a few seconds of enjoying the fantastic flavor before the fire flares. And it does flare.
If you like fiery hot sauce but are not impressed with sauces from extracts. I would also recommend "Ralphs' Righteous Habanero" and "Red Savina Garlic" hot sauce. They both add a true Habanero flavor and still remain very hot. I haven't tried the rest of their products but they have proven their worth with the products that I have tried.
Mild to Wild has always sold Red Savina Mash by the 5 gallon bucket. But just recently I notice that they are now selling it by the pint. Kinda cool!!
I did get a chance to meet the owner last year at a "Spice Fest" held locally. He seems like a real stand up guy. Except for the wing eating contest that he held.......those poor people. He used a combination of the two hot sauces mentioned above for dipping the wings, then (incase that wasn't enough) he rolled the wings in crushed Red Savina flakes!!!! I hope those lucky contestants had a roll of toilet paper in the freezer waiting for them when they got home.

The Fiery Hot Habanero is on of my top 5 favorites! I order it by the gallon from Jim. I use it on everything, especially now during grilling season. Definitely worth trying.

This company is one of the black sheep of the industry unfortunately. I have tried Pure Arson and Red Savina Garlic and both are on the same level as Ca Johns Talon, Ignite, and The Legend. I haven't tried Backdraft by Mild to Wild yet and I am looking forward to doing so. They are a good company and I am hoping to see alot more of them.

Cheers,

 I wouldn't say that Jim is a black sheep, he's just a laid back guy and a Legend in his own right within the industry. One of the BEST in my opinion. Maybe not as well known in the consumer's eyes, but lots of the manufacturer's depend on Jim as a source for peppers and mash.

I agree Cap'n Bones, what an awesome guy. Jim probably is a part of just about every sauce company out there, whether it is because they use his peppers or even just heeded his advice. Next time I see him (NM) I'll buy him a PORT and thank him for what he has done for the industry.

Love to go to Jim's booth and see people laying on the floor from the Stupid Hot!

Well said, Without Jims mash and advise, we would have never made it this far. Just the mash alone makes sauce making fun, it is far superior to anything else out there, and the advise Jim offers, wow, that guy could teach a course on peppers and sauce making.
