Toooooooo many small sweet chilis

My sweet SWMBO brought home a gallon bag of largeish jalapenoish peppers(twice the size of the average jap) that have no heat and a decent sweet taste. Red, yellow, orange.

20-30 in all.

I could dry and grind them for paprika, but that doesn't excite me.

I am thinking to maybe stuff and freeze them.

My wife wants rellenos, but there is a reason they use huge poblanos for that. 2-3 big ones is way less of a PITA than 30 little rellenos.

I am thinking some kind of sausage, cheese, hab flakes, breaded or not, maybe crab, maybe 3 or 4 different kinds.

Any thoughts appreciated!!
