SPICY CHORIZO POPPERS!!!!!!!

OK, SWMBO got me a huge bag of sweet peppers. Nice of her, but WTF do I do with 40 or so sweet peppers?

Chorizo poppers:

40 small sweet peppers
1 cup flour
1 cup oil
3 cups milk
1 lb sharp cheddar
1 lb Monterrey Jack
4-5 oz of whatever other bits of cheese are in the drawer going begging
5 scallions, sliced thin, green and white parts
2 tbsp hab flakes
2 tsp jalapeno powder
8 cloves garlic, crushed
1 large onion diced small
4-5 links of good chicken chorizo (or pork)

Batter: 1 egg, 1 tsp of water, flour, oil for deep frying

Heat oil and flour over med heat for 10 minutes, mixing well into a light roux.

Add onions and garlic to the roux, stir.

Broil diced chorizo until it gets some color, add to roux.

add milk and mix thoroughly. Should thicken quite quickly.

Add scallions, cheeze (;)), salt, hab flakes and jap powder. Mix well.

When cheese is melted and mixed well, turn to low.

slit peppers to allow for filling.

Fill peppers and DIP THE WHOLE PEPPER INTO THE CHEESE SAUCE.

Place on a tray and freeze ASAP.

After frozen, mix egg and water for batter.

Place flour in a separate bowl.

Heat oil to 350F.

Dip frozen popper in flour, then egg wash, then flour again.

Deep fry for 7 minutes or so, or pan fry for 10.

WOW. I was seriously worried about this little experiment! It couldn't have turned out better!

Dip in your favorite sauce, but it has a decent kick already!

CD YOU BASTARD!! I had already planned on chix and mushroom fett for Mrs. Blues' dinner tonight! I even invited Pam over! You have ruined those dinner plans! EXCELLENT! You did everything perfect....especially in adhering to the posting pics rule. But....not so fast...you left off the smell-o-meter.

Is there any better sausage then some good Mexican chorizo? i think not! Just bury me in the stuff when I die.

Looks lie an awesome dish. Will have to try soon!
 
Looks great Cheezedoodle! I just love all types of stuffed pepper. This summer I plan on putting my sausage stuffer to use for stuffing various peppers in mass quantity.
 
That's all that would be better Potowie!!! Some home made sausage.

Amazingly that chicken seems to be well suited to chorizo.

They had a mango habanero chicken sausage that sounded great, but the chicken just didn't work.

I highly recommend doing 40 or so at a time. It was a little of a PITA but having t gallon freezer bags full in the.....freezer....feels great!
 
Those look like a work of art... you making me hungry! Only have one thing to say: chicken chorizo? Only good chorizo is a pork chorizo... at least to me. Love them porks!
