Garlic Cucumber Dip (Tzatziki)

For the BBQ session.

 

Made from scratch, gallon milk, Kefir culture (or yoghurt) . Two days later drain in cheese cloth so its one third volume. Shred cucumbers (four) and let drain. Crush garlic bulb and add some dill and two lemon juice.

First BBQ

Been a very long time since Ive done this so christening my new fire pit went realy well.

Still want to do a stucco type layer on the outside so the bricks are solid, filled in the gaps with potters clay. Want to rig a smoker on their so if anyone has recommendations, 27"diameter grill.

Cheese Melts

Wasent grilled so didnt put it in that thread.

Bought some of that orange stuff for the first time in a few decades, Balderson Extra Old Cheddar,

On my fresh Fife bread, raw onion, pan fried, topped with Long Joe's Cayenne.

Potatoes

Quicky fried potatoes and Red Pepper. Topped with Golden Berry sauce and chipotle.

Golden Berries Sauce

Made a sauce a couple days ago.

Golden Berries, very nice and sweet with a citrus flavour.

 

265gr Golden Berries

586gr Oranges

1 med Lemon peeled 

4 Burning Bush Habaneros dried

1 cup Natural ACV

1 cup Honey

1 cup chopped white onion

1 stick cinnamon 

salt to taste

 

Soak berries 24 hours with juice of the Oranges.

Add all ingredients except cinamon and blitz.

pour all into pot including cinnamon stick and cook for ten minutes and simmer a couple hours. Remove stick and jar.

 

Overall heat level about Jalapeno. Was great on my pancakes :)
