Staggered harvest can be a PITA, but I take what I can get. For example, I was getting a paprika pepper here and there during growing season, but now I'm getting 6 or more at a clip. It's the way they've always grown for me. But other peppers put out small bunches as well, so I can dry multiple varieties at once instead of just holding on to a few peppers and waiting for more to dry.

Starting to pull up ginger for fresh use. In the next few weeks, I'll start pulling it up for storage. I plan to grate a bunch - small dollops - then freeze for the winter. The ginger turned out really nicely. I've had a cold so I haven't been able to get the full flavor of it.

I always thought it was related to too much rain/humidity; or those conditions made it easier for fungus/virus to do their work. For example, last year was much more mild and plenty wet; this year, while I've had a lot of rain, we've had heatwaves that have balanced it off. The result is I've had less of that internal decay in my peppers.
