I found out about this variety after I had planted my garden this year. It’s on the list for next year.
Does anybody have any experience with this pepper? Any reviews?

Smoked pepper weight vs Fresh pepper weight ?

When figuring out salt requirements for a fermented chipotle type sauce, would it be better to use the weight of the peppers that I’m smoking ,before smoking or the weight post smoked? I figured using 4% salt.

I’ve grown Tabasco, Cayenne, and Jalapeño peppers for the last couple of years. They were pretty hot to me at first, now that I’ve built up my heat threshold somewhat, what would be the next logical step up the scoville ladder ? Something with more heat and good flavor something that will make a good hot sauce?

Paper towel germinating

I have some cayenne pepper seeds in a paper towel and sandwich bag. Some are starting to grow tails. My questions are how long do I let them grow before I plant them in potting soil? How deep should I plant them? Should I worry about the seed head?

Cayenne/Horseradish sauce

I started up new sauce with cayenne, horseradish, garlic and onion and about 4% salt and water . I used SD hooch for my starter. All the ingredients are raw with the peppers being previously frozen. The horseradish seems really mild in heat but with a touch of sweetness.
