  • I live in New Zealand and we're coming to the end of our growing season. How do I ripen the chillies that are still obstinately green? Any help so long as it will work will be much appreciated. Thank you.

    Pick them just before the first freeze and put them in a paper bag in the kitchen for a week or two. Some of the green pods will change color and the borderline ones should fully ripen. I do that with almost all of my pods to let them develop more sweetness and flavor.

    I've found putting them in a paper bag with a banana helps ripen the lot.
