After two weeks in the fridge this stuff has mellowed out nicely. Less boozy and more fruity tasting.

Brine:

Water
Salt
Tamari
Fresh ginger
Sichuan peppercorns
Star anise
Juice of 1 orange

Soak for three hours in fridge.

Glaze:

Hoisin
Honey
Peanut oil
Five spice
Grated ginger

Smoke the birds with some alder chips at 250-275 until internal temp hits around 170.
