General Grilling Thread

I just noticed that we don't have an all-rounder thread for BBQs and grilling. We have food-specific threads, but what about when you mix up your grill...show us your BBQ goodness here :D 


Tomorrow night's dinner all sorted...... was going to cook it up tonight but the weather was crap, wasn't in the mood to grill under disgusting slate-grey overcast and light rain, plus it was dark by 4.30pm under these conditions, yuck!  I want to see the colours of the sunset playing over the river and sky when I fire up the BBQ. :)

It appears we don't have a thread for general chicken related cooks. Show us your chickens! 


Made a spur of the minute decision today get some half-price wings, but ofcourse the supermarket was out of stock, which seems to be a favourite pastime of shops here  :rolleyes:  So settled on drumsticks. My firelighters disappeared, so tried to get the coals going with dried up eucalyptus leaves and twigs and oil-soaked newspaper. None of this stuff would catch fire to save its friggin life and my gas match died right in its ass so had to go to the shops to get some firelighters. Also looks like the rest of my charcoal is shitty tiny pieces, might have to throw it out and try a different brand.  :banghead:


Geez, charcoal burns hot and is ready much quicker than briquettes. Had to nearly close off all the vents to get the temp down to a sane level lol 


And when I closed off the vents at the end, the charcoal completely died out within minutes, unlike briquettes which still generate heat hours after shutdown!

Went to the local hardware store on an unrelated mission and found the world's second hottest chilli right there for the taking for 6 bucks! Is there any special potting mix or food required to grow these peppers as hot as they can be, or can I just plant them in a pot of potting mix and give them the occasional plant "food" and regular watering?


Not experienced in chilli growing so looking for a few tips :)

Got a new Weber recently and I'm new to the whole charcoal grilling game (used to be a gasser). This is my second real cook on the weber. 






Wings marinated in Bourbon sauce, Red wine sauce and a rub I made







Lamb chops and Pork belly









Chargriller Deluxe Smoker, Opinions?

Wanting to get into smoking and charcoal grilling and thinking of getting this smoker. Now I'm the kind of guy that researches all his purchases to death, so I did my homework reading reviews and all that. Seems like most people like it and had success with it. But I've also heard that it "leaks" smoke and the paint can be compromised by the heat and temps are tricky to control. I've never smoked before, never even used charcoal so don't want something expensive (here the WSM costs $700 and that's for the 18.5" model - absolutely disgusting markup on Weber products in Oz). I just want something decent to learn on. I'm thinking anywhere it leaks smoke can be sealed up with a gasket maker (found a brand which is rated to 700F). 


Anyone ever use one of these or something similar, if so what do you think of it?
