    This may just a be a stylistic note - I guess I can't find a reference for what I'm thinking of right now, but consider making the word 'with' in 'with select chillies', slightly smaller. I think it seems to add a little something. I'm picturing a serif font for some reason, idk italian food...

      I would think that the back wall could be banked into a hill - you would benefit from the added insulation from the ground, and in addition, the back wall would not admit light anyways so it's really not an issue for that. I wonder if the amount that the wall could support would play into it...

    That's actually a really good idea - I had been thinking, should I put a fan blowing towards them, or would that dry them too fast? A shroud might help there, perhaps. I cut up 4 pounds and strung those and put a low speed fan going towards it but idk, I'll have to see. The lowest speed on that...
