Pepper jelly (adapted from the Ball Blue Book):

1:1 sugar : blended fresh hot peppers (jalapenos work well, looking for substitutes)

~1:3 apple cider vinegar : mixture above

put in a large pot to prevent boiling over

comes to a HARD BOIL (watch out)

Also, there will be noxious fumes from the pepper oil so open a window at least.

Boil and stir until it just starts to thicken, pour into sterilized canning jars

Serve over a bar of cream cheese with triscuits
