Whatever’s Ripe Sauce (Picked Ripe Peppers from Garden)
This is a good everyday hot sauce, nice flavor and a medium heat. Makes about 30 ounces of sauce.
Ingredients
• 5.3 ounces hot peppers (mostly red habaneros and Thai peppers)
o About 14 red habaneros
o About 28 Thai
o 2 Santa Fe
• 4 green onions, roughly cut up, tops included
• 6 mini sweet peppers, roasted, skin removed and de-seeded. You could use one large sweet pepper instead
• 5 cloves garlic, roughly cut up
• 1 large carrot, large diced
• 1 TSP dry dill
• 1 TSP dry yellow mustard powder
• 1.5 TSP Kosher Salt
• ½ cup white vinegar
• 1/3 cup pickle juice
• 1 lime, juiced
• 2 cups of water
• 1 good squirt of honey (about 1 TBSP)
Directions
• Put everything into an Instant Pot and cook on the Meat/Stew setting for 20 minutes.
o I use the pot so I can do this outside and not choke out everyone in the house with the pepper fumes.
o If you do not have an Instant Pot, you can just bring everything to a boil and then simmer until all the veggies are soft.
• Let cool for a little, but you will want to process while it’s still hot for best results.
• Put everything in a blender and blend until smooth.
o Use a towel to hold the top on in case any of the hot stuff squirts out during blending.
• Bottle and cap. Turn bottles upside down and allow to cool. This will seal and sterilize the cap (assuming you’re bottling while this is still hot).
• Store in fridge after the bottles cool.
