Dooley’s Red Smoke Hot Sauce Recipe
1 pound fresh red tabasco chilies or red Serrano’s or any red mild variety (I used Red Fresno), chopped
4 dried smoked Serrano chilies ( I smoke my own with hickory)
½ cup of minced garlic
1/2 cup of diced sweet onion
1 cup distilled apple vinegar
2 teaspoons salt
Dash of chili powder
Combine the chilies and garlic in a saucepan and heat. Stir fry for 5 minutes until garlic browns. Add 1 cup of water and boil until all water has evaporated. Remove from the heat, cool, and place in a blender. Add vinegar, salt and chili powder and puree until smooth. Strain mix in a glass jar. Allow to steep for 2 weeks in the refrigerator. Reheat and add more vinegar if needed.
