my recipe for salsa:
Honey and Balsamic Vinegar Salsa
place all ingredients in a food processor, if you ain't got one, go get one!
1 can whole tomatoes (or peeled fresh ones, what ever you can find)
1 sm can green chilies
1 sm onion, quartered
1 sm bell pepper, de-seeded
jalapenos to taste
pinch kosher salt and some cracked black pepper
Cajun seasoning like Tony Chachere to taste
1/2 lemon juice
2 tps minced garlic
a few splashes of Worcestershire sauce and or Crystal Hot sauce
honey....about 3 or 4 tps
balsamic vinegar....about 3 or 4 tps (use the sweet and sour to balance the taste, you may need to experiment to find it.) the better the quality of honey and vinegar the better the salsa!
I don't like cilantro, but if you do, add some.
puree all the ingredients in the food processor to a still chunky state then taste and modify for sweet, sour and heat. process some more to desired state, I like small chunks of everything to be evident. At this point pour out about half the salsa for kids and Yankees and then add some more peppers and hot sauce to the remaining salsa. serve with chips. this salsa is best the next day when all the flavors have had time to intermingle and mellow!
