Mash 012 - 'November Juliet'
450 G Habaneros
400 G Butternut squash
100 G sea salt (coarse)
16 OZ apple cider vinegar
180 ML bottle of red wine
1 LB fresh local cherry or Campari tomatoes
Add Habanero, Butternut squash and salt to a food processor until well blended, add all but 16 oz of cider vinegar until a watery pulp. Transfer to 12 quart pot. Add tomatoes and red wine to a blender or processor and let it whip to a pink cream. As pepper mash begins to simmer, whisk the tomato and wine mixture in. Cover and simmer for 20 minutes, stirring every 5.
Remove from heat, and pour the mash carefully through a high capacity strainer (I use a 10 cup strainer) into a temporary glass pot.
Strain out all the seeds and pour back into the sauce pot again. Discard the seeds.
Bring back to a simmer for 5 minutes, then repeat the straining process.
Transfer back into the pot, bring to 190 degrees and bottle or jar immediately.
