- Place a small rack over a casserole dish (to collect the drippings)
- Melt some butter in the microwave
- Coat Chicken pieces with butter (you can simply put unmelted butter in/on your hand and coat; the heat from your hand will melt it)
- Place 4 to 6 pieces of Chicken on the rack
- Liberally sprinkle and coat with
- Seasoning Salt
- Black Pepper
- Garlic Powder
- Cayenne Pepper
- Bake uncovered at 285° for about 90 min to 2 hours
- Dribble the drippings over the Chicken and serve
Serve with Brown Rice mixed with Black Beans
