Potato & Leek soup; Welsh style.
5 Leek's
Half a celery
8 - 10 potatoes
1.5L veggie stock
1tsp curry powder
300ml cream
1xsomething hot
Butter
1. Chop leek into rings, chop celery into pieces, chop potatoes into cubes.
2. Saute leek and celery with curry powder and butter for 5 mins on low-med heat.
3. Add stock and something hot, bring to boil
4. Add potatoes
5. Simmer for 15 -20 mins.
6. Mash or blend contents - add cream.
7. Enjoy
