A place that is working with the SBA to get a loan for me wants a 3 year projection for my hot sauce business. How in the world do you do that from scratch? I have no official sales. I'm just confused on how to do this and they aren't being very helpful. Do I guess? I guess I can take a national average? I'm not sure. Any ideas? Thank you for your time.

You might be applying for the wrong loan. SBA Microloan is for start-ups. You should have a business plan and startup costs but they should not ask for projections.
Make sure the intermediary you are working with knows you are a start-up and interested in the Microloan program (up to $50K).
