i just have the 60 dollar 5 tray nesco from amazon, works great! made beef jerky, fruit roll ups, and have dehydrated 20+lbs of peppers so far.

Square Nesco about $60 for starting out. You can buy more trays to expand as needed.

Square nesco is good, just make sure whatever dehydrator you get has a way to set temperature.
