then get on it man. this is something i do daily! just get a small pot with water, toss in the beets, set a timer for 45minutes and walk away. just do it! can beets, what's that all about! i even juice my beets. it won't be a mistake... just do it!
cover the beets in olive oil and some balsamic, wrap in foil, roast for about an hour. once they're cool enough to touch peel 'em, make a salad with apples, endive, pecans and goat cheese, use the juice from the roasted beets as a dressing.. add a lil left over bacon fat to the dressing and more balsamic if you need it and boom, crazy good salad.
