No crock pots allowed, indeed!!! You need to do a good, homemade crawfish etouffee. It's only an all day affair if you boil your own crawfish first. You can buy Louisiana caught tails @ about $15/lb.

or Chinese farmed tails @ about $8/lb

Sounds good Phil, but my kids might revolt with the tough of crawfish. Found this chicken etouffee. Let me know how to improve this recipe to make it more authentic.
