I’ve wanted to for the longest- but time, money, motivation (mainly) keeps me just buying it. Buchi brand is just a few hrs. away (one of my absolute favs. ‘Earth’ &‘Holiday’ are killer) Have a local Co. nearby- Lenny Boy. Love KeVita (lavender!) & Reeds (ALL of them!) Just tried the Health-Ade ones last month. New brand ‘Buffalo Mountain’ I just saw/want to try. Celestial Seasonings, GT-had them all. Kefir crazy too, & kvass!

I just bought a JUN scoby. Gunna brew with honey and green tea instead of sugar and black tea. I want to do a continuous brew though and even though I've read a lot about it I wanted to see if anyone had any input. I like kefir Alchymystic but I've really reduced the amount of dairy I consume, so I don't think I will get into fermenting that just yet.

I think your substitutes are spot on Rawk! Big fan of the "K" myself, and the more mature the "mother" the better the brew. Keep me posted how the ferment goes, w/ the honey & green tea! It should be amazing! Wish I'd have thought of it 20+ yrs ago!!! You Rawk sista!
