There's a great local habanero Jack out of Sonoma... I hear ricotta is one of the easiest to make, a spicy ricotta to make some stuffed shells or manicotti would be awesome

Austin, ricotta, paneer and queso fresco/blanco is incredibly simple to make. I make it often. Cheeses such as cheddar and Swiss are quite a bit more difficult.

I like kormas, t0mato, but I really think there are better options for cheese. Dōpiaza, for example.

Pepper jack is the way to go for sure. Make naga jack. That'll warm you up for sure.
