    I did cut them in half.  And they weren't rotten or moldy when I checked them. I turned it on this morning at 95, next time I will dry at the higher temperature.   This is my first drying experience.     Silly question... as I'm looking at making some sauce on the weekend... how do you test the pH level? Oh, and if it's above the 4.6 (or 4.0 whatever you aim for) magic number, how do you bring it down below that?
