Are making the fruit powders or buying them? What did you think of your finished sauce? The color looks great.

In the future you might try just removing the offending mold/yeast and poring a small amount of vinegar on the top without stirring it in. It will help stop and prevent further mold/yeast growth. This has worked for me in when I had doubts.

Nice early start. Will you have room for your bigger plants in 3 months? I noticed you were in MN so will be needing some time before going outside. Those sugar rush plants get fairly big.

I like the sound of currents. I guess somewhat like a blueberry's. I appreciate the suggestion and measurements. I'm still working on my next batch. The peppers are fermenting now. My freezer is plugged with Blueberry's and raspberry's so I have some options. Thanks for the suggestions!

The fatalii I grew this year have a very strong citrus smell. They also have a very sharp heat sensation. Tip of the tongue.
