According to legend, provolone is the traditional cheese used. Which is my favorite way. Who knows though. Philly cheese steaks are a great debate.

I usually use these wax peppers from the local grocery store that have a little kick (they dont label them with an accurate name) but my mother in law will be coming over later and she can't handle any heat at all.

Not a great picture but I made a venison parmesan type thing last night. The sauce is a white wine concoction I whipped up while drunk. Turned out very nice despite my inebriated state.
