    Hard to say for a certainty; there are a LOT of varieties that look like that. Have you considered getting in touch with whoever does the purchasing at the market you mentioned? They should be able to give you a definitive answer.

Pureeing more solids in should compensate for the change in consistency if you have a feel for it.   Also (and this is just my two cents based on the direction my own palette went in), I'd consider messing with some milder peppers.
