Two months later I got a call from the butcher with my tri tip.  They had some cut into "steaks" and then some labeled roasts.  I bought the roast I'll be grilling this weekend!

You got it. Oh and for those that didn't know, no sausages were lost in the chimney fire at Sausage Camp earlier this year.

I'm home now, but I did just take some horseradish cheddar sausage out of the freezer to thaw, so maybe tomorrow.

I am the last one to judge by pics, but what was the internal that you were going for?  I don't know that I have ever heard of 18 hrs and from the looks of it you could have stopped at 14 or 15.

PVC pipe for tacos?  I am definitely tuning in for this one!

Looks like I'll be heading back to sausage camp at the end of the month. Time to start rebilding
