Chuck eyes and eggs a few nights ago! I've eaten steak and eggs at 3 in the morning after a good drunk so many times but it never gets old. Grits covered with perfect eggs covered with some Crystal mixed with hashbrowns is God level "Good Eats"!!  

I smashed some tonight, 80/20 on GrillGrates, 3 patties so thin they were like crispy fried beef.    Comfort food that brings you back to old times when burgers were cooked right on those old seasoned flat tops in your favorite burger joint!!!!

I was talking to someone else and shared this bit of knowledge. Lafayette has the only Popeyes with a lunch buffet and the owner of Krispy Krunchy Chicken is from here too. I knew about both and just took it for granted, now I'm impressed. I thought boudin was our biggest seller.  ...

I made a pot of Tonkotsu ramen with trotters and neck bones, braised pork butt slathered with tare and over  cooked eggs.

You survived!!!  It looks awesome too, that pork belly is killing me.

I can't seem to remember to put out everything. It happened again, this time with the roasted garlic but other than that the first round of Christmas was a success. It's a little overcooked for me but I had to please everyone, some had to warm up the slices to finish the browning.    

NOPE, I layed out the charcoal and added wood on top, it doesn't burn but more or less smolders like it does in a drum smoker.

DANG, the Saints lost but I'm still a winner for 2 reasons.   Saints are still going to the playoffs and I just sampled 2 ribs, I think the ribs win over the game.         I know it doesn't look like there's meat on those bones but it's so rich that you won't want a 3rd one and a delicacy...

It looks great, I'm glad you got it right and now you know what to expect.   I just lit the smoker for beef ribs and maybe a chicken. Have fun!! :cheers:
