Yeah it would, wonder where you can get seeds from... I can't quite remember but does it prefer a cooler climate to grow?

:) I thought abput that too! But that is a big field you would have to have as each flower only has one stigma. Could you imagine harvest time? No wonder good quality saffron is so expensive.

^^ ha ha Nova it will grow fine in perlite, some people do their hydro in just perlite. You just gotta make sure that you water quite a few times a day, perhaps set up a dripper?
