I was thinking it'd be cool if we could have another friendly group events of sorts (no judging/voting needed), but when the focus on a very specific item... where we could then all try our hand at it and share recipes. I was thinking of stuff like mustards, tortillas, hot ketchups...

So... as far as most hot sauces... what do you do? Not open/try most of them? Do you buy doubles of everything?

Also, if a sauce lists "vinegar" in the top 3 ingredients, I almost never refrigerate it and have never had a problem... do you think that's safe? Maybe I should stop.
Paulky, almost all the bottles in your place look unopened. Are the ones on display around your kitchen/home just for show? Where do you keep the ones you use?

From last night. Lemon Basil Chicken pasta. Chicken breast was the only spicy part, but not too terribly spicy. I'll come up with something for the leftover chicken breasts today.

I was eating it on crackers the other day in front of my kindergarten class during lunch and they thought I was nuts. (I PUT MASKING TAPE OVER THE TATAS ON THE BOTTLE AND WROTE MY NAME THERE - STEALTH!)
Awesome, JayT! I actually drizzled a little 1498 on my wings as I ate them! (And some bleu cheese).
I actually just keep the bottle of 1498 in my purse now. I should hit up some of this 1841 sauce.
