Awesome, looking good. Noticed one of my pubes has split and has what appears to be the beginnings of its first flower so yours should be close. When I repotted mine last week they were just starting to get a bit root bound fyi. What are you picking for first ripe pod of the year?... Jonah?
80-85f is the conventional wisdom.
I have found the pubes to be happier at 65-70f otherwise their leaves can go a bit droopy. Baccatums seem pretty flexible but certainly do well between 70 and 80f.

I have never really thought about horse manure as a health hazard. Composting it is great as if can kill any seeds and grains that pass through. If the horses weren't fed any grains I would not bother composting.
